Caramel and Banana Cake

Ingredients
360g self raising
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
2 ripe bananas
4 tblsp sour cream
4 eggs
360g castor sugar
180g butter
1 tsp vanilla essence
Caramel topping
120g butter
300g brown sugar
Salt
5 bananas

Method
  1. For topping melt butter, add sugar and salt and cook until melted
  2. Pour this into tin
  3. Mash banana with sour cream
  4. Place sliced bananas over caramel
  5. Beat eggs and sugar until creamy
  6. Add butter and vanilla
  7. Add mashed banana
  8. Add dry ingredients and mix
  9. Pour over top of banana
  10. Bake for 45 minutes
